Their simple yet exquisite gastronomy had a permanent influence on Peruvian cuisine, and the original pesto ligure became the popular tallarines verdes (green noodles).

¼ cup olive oil

¼ cup red onion, diced

2 garlic cloves, chopped

4 cups spinach leaves

1 cup basil leaves

¾ cup evaporated milk

½ cup queso fresco (or feta)

¼ cup pecans

Salt and pepper

1 pound spaghetti

1 cup cooked green beans

½ cup Parmesan cheese, grated
